Healthier Apple Spice Oatmeal Cookies

Ingredients

  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 3/4 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/3 cup sugar or 8 packets Splenda
  • 1 large egg
  • 4 tbsp unsweetened applesauce
  • 4 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1 1/2 uncooked oats plain
  • 1/2 cup finely chopped apples

Instructions

  1. Pre-heat oven to 375 degrees Fahrenheit; lightly spray cookie sheet with non-stick cooking spray or line cookie sheet with parchment paper or a silpat mat
  2. In a small mixing bowl combine dry ingredients (flour, baking soda, cinnamon, nutmeg, salt)

  3. In a large mixing bowl whisk together butter, applesauce, and both sugars; add egg and vanilla and mix well; pour the dry ingredients into this mixture and combine well

  4. Mix in oats and apples
  5. Drop rounded cookie dough (tablespoon vs small cookie scoop) onto cookie sheet.  Bake at 375 degrees Fahrenheit for 10-12 minutes (or until cookies no longer gooey in the center).
