Tortellini in a Chickpea Red Sauce

Ingredients

  • 2 tbsp olive oil
  • 1/2 medium onion diced
  • 3-4 medium cloves garlic chopped
  • 1 can diced tomatoes
  • 1 can chickpeas (no salt added) drained and rinsed
  • 1/2 cup chicken broth
  • 3 cups packaged cheese tortellini
  • salt and pepper to taste
  • basil leaves (optional)
  • parmesan cheese (optional)

Instructions

  1. In a medium saucepan, heat oil over medium heat. Add onion and brown (cook for about 3-5 minutes).  Add garlic and cook until fragrant, about 30 seconds (do not brown)

  2. Add tomatoes and broth, and bring to a boil

  3. Add chickpeas and salt/pepper; reduce to simmer and cook for about 20-25 minutes

  4. While sauce is cooking prepare cheese tortellini per package instructions 

  5. Add sauce to pasta, and toss. Serve with Parmesan, and garnish with torn basil
