Whole Grain Chocolate Chip Oat Pancakes

Show your family love this Valentines Day (and any other day of the year) with this delicious breakfast recipe for Whole Grain Chocolate Chip Oat Pancakes! A favorite recipe of my family and hopefully to be one of yours also!

The recipe offers numerous health benefits compared to a traditional pancake recipes.  The added oats and whole wheat flour help provide a substantial amount fiber (~7g), while the egg whites and applesauce help to keep the recipe lower in fat.  I tried to keep the recipe lower in sugar by using a sugar substitute (you can use granulated sugar if you choose) and getting sweetness from the added ingredients such as the strawberries and chocolate chips.  Minimal syrup is used for the pancakes given the strawberry puree topping. The inclusion of strawberries adds vitamin C and antioxidants.

In several previous blog posts I have mentioned the nutritional benefits of dark chocolate versus milk chocolate.  Unfortunately I did not have dark chocolate chips on hand, but several food companies manufacture dark chocolate chips. Alternatively you could chop up a dark chocolate bar for the recipe.

You will find this recipe extremely simple to make – in fact you can prepare the entire recipe in less than 20 minutes.  Great for any day of the week when you want a hot breakfast and have little time to prepare it!
