Halloween English Muffin Pizzas

Happy Halloween!

I hope you and your family are enjoying plenty of festive halloween activities like trick-or-treating, attending costume parties, exploring haunted houses, carving jack-o-lanterns, and watching horror films.

Halloween themed snacks and food recipes are available in abundance, however I could not go without sharing one more.  The “pumpkin” themed mini pizzas are not only lower in calories and fat, but also simple to prepare.  They can be served as a meal, snack, or even as appetizer for your next halloween party.  I think it goes without saying that they are fun for children to assemble – but for safety reasons the veggie toppings (ie. stem, mouth, etc) should be pre-cut.

I choose to top (decorate) the pizzas with tomatoes and green peppers, however various other substitutions would work.  Such options include basil, olives, broccoli, or turkey pepperoni.  Be creative!

Ingredients:
1 whole wheat English muffin (split in half)
1 tablespoon pizza sauce
¼ cup low fat cheddar cheese
1 strip of green pepper; into into 2-4 pieces
1 slice of tomato; cut into eye and mouth shapes
Directions:
1.    
Pre-heat oven to 450 degrees Fahrenheit
2.    
Split English muffin into two
3.    
Spread pizza sauce evenly on one side of each
half; top with cheese
4.    
Place green pepper on top for stem; place tomato
pieces for eye and mouth shapes
5.    
Cook for 7-9  minutes or until cheese lightly browned.
