I hope you had a fantastic Thanksgiving holiday and got to spend some relaxing time with family and friends. A few days before I unplugged from social media for the holiday this recipe for the Best Tortilla Crust Pizza was created. I had no idea this quick and easy recipe would turn out so delicious. This recipe is seriously one of the most delicious homemade pizzas I have ever made (and if you follow along on the blog you know I have made several pizza recipes). The hubs actually thought he was eating a thin crust pizza I pulled out of the freezer.

So what is the secret to successfully creating the Best Tortilla Crust Pizza ever?! A typical tortilla crust would be too thin and flimsy for a pizza. The secret is to actually layer two tortillas together with a very thin layer of mozzarella cheese in between. The layers create a flaky thin-crust pizza. The key is to not overdo the cheese portion in between the tortillas or add too much pizza sauce or cheese on top. The result will be a soggy pizza that lacks crunch. Also, make sure you bake the pizza until the tortilla is well browned to ensure a crunchy crust.

Let’s talk tortillas now! My current tortilla addiction is actually purchasing uncooked tortillas that are in a flattened dough form and quickly cook them myself. Each tortilla takes about 60 seconds to prepare (possibly a little longer if you want a more crunchy tortilla). I have created so many different recipes with these tortillas. If these tortillas are not available in your local grocer the already cooked packaged tortillas will also work for this recipe.
