The temperatures are on the rise here in the ATL! I told my husband that it felt like we went on a walk in the 100-degree weather today. He laughed and said it was only in the 80’s, but regardless of the humidity it felt pretty darn hot. Hot temps mean all I want to do is stock the freezer with popsicles and ice cream sandwiches. So of course as I always like to do, I sought out a healthier alternative to ice cream sandwiches! Today I introduce you to Banana “Nice” Cream Chocolate Chip Sandwich! The delicious and healthier banana ice cream is made from 2-ingredients and sandwiched between two graham cracker squares.
If you aren’t familiar with banana ice cream, or sometimes called “nice” cream, it is ice cream made by blending frozen banana into a creamy ice cream like consistency. The ice cream is made with whole foods, and no sugar is added – the natural sweetness of the bananas is what adds a sweet flavor. For this Two Ingredient Banana Ice Cream Sandwich recipe I also added vanilla Greek yogurt for some added protein and creaminess, but you could certainly leave this ingredient out if you wanted to keep it a vegan treat. Chocolate chips were included to add a hint more of flavor, but these are also something that could certainly be left out.
This recipe for Banana “Nice” Cream Chocolate Chip Sandwich is relatively simple to make but does take some time in between steps as you will need to freeze the bananas for 4-6 hours before blending. The sandwiches also need to be briefly frozen again after constructed to help keep maintain their structure. My toddler was able to help out with some of the steps including mixing the blended bananas and yogurt.
The whole family loved this Banana “Nice” Cream Chocolate Chip Sandwich recipe – a sweet treat for fewer calories compared to most ice cream sandwiches. I do want to point out that while I do like to offer my family healthier options and substitutes at times, on occasion, I do offer the real thing (with full fat, sugar, etc.). I feel its super important to teach my family the ability to balance all of your favorite foods into your eating habits.

Banana "Nice" Cream Chocolate Chip Sandwich
Ingredients
- 3 ripe bananas
- 1 cup vanilla Greek yogurt
- 2 tbsp dark chocolate chips
- 9 graham cracker sheets broken in half to make squares
Instructions

Cut bananas into thin slices. Freeze for 4-6 hours

Line a 9" x 9" baking pan with foil. Place 9 graham crackers squares touching each other in single layer in pan. If there is space between graham cracker and edge of pan reform foil to fit snug against edge of cracker.

Remove bananas from freezer and place in food processor and blend until creamy (this may take a few minutes and you may need to stir a few times to faciliate creaminess).

Add yogurt and blend until well combined

Stir in chocolate chips

Spoon about 1 1.5 tbsp batter onto middle of a graham cracker. Gently top with graham cracker. Be cautious not too apply too much pressure and squeeze out yogurt.

Repeat for remaining squares.

Place in freezer for another 2-4 hours

Remove from freezer and cut between squares (if any have frozen together) and remove foil.

Store uneaten sandwiches in an airtight container in the freezer (or can individually wrap and store in freezer)
