Hi Friends!

I have a fun recipe to share with you today!  I first gave you a sneak peak of this chocolate donut recipe back in June on #NationalDonutDay over on Instagram.  Today I am sharing the official recipe for Chocolate Ice Cream Batter donuts – my newest baked donut recipe creation!  This recipe is incredibly easy to make and will only require a few ingredients.  And yes the main ingredient is chocolate ice cream!

These simple donuts are only made with three ingredients – chocolate ice cream, baking powder, and cake flour.  The ice cream provides the fat, sugar, and chocolate flavor you need for the recipe – so it helps keep the addded ingredients to a minimum.  If you are a fan of super sweet treats then you made consider adding a bit of sugar or honey as they donuts are not overly sweet. But if you are like me and just like a hint of sweetness the sugar amount in these donuts is perfect.

Be creative with the topping for these chocolate donuts!  I made a chocolate glaze and topped with my favorite rainbow sprinkles.  But to keep things simple you could just top with your favorite ice cream drizzle like chocolate or carmel syrup and then sprinkle on any of your favorite ice cream toppings.  You could even top each donut with whipped cream and a cherry?!

Chocolate Ice Cream Batter Donuts

Prep Time: 10 minutes

Cook Time: 7-9 minutes

Ingredients (12 mini donuts)

  • 1 1/2 cup full-fat chocolate ice cream
  • 1 cup cake flour
  • 1 1/2 tsp baking powder

GLAZE Ingredients

  • 1/2 cup powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp milk
  • 1/4 teaspoon pure vanilla extract
  • Optional toppings: chocolate syrup, caramel syrup, sprinkles, cherries, dried fruit

Instructions

1. Preheat oven to 350 degrees Fahrenheit. Spray small donut pan with non-stick cooking spray

2. Spoon ice cream into medium mixing bowl. Microwave for 30-40 seconds or until melted.

3. Add flour and baking soda to melted ice cream and stir well until no lumps remain.

4. Spoon batter into each donut well to fill about 2/3 full

5. Bake at 350 degrees Fahrenheit for about 7-9 minutes

6. Remove each donut and let cool

7. To make glaze, mix all ingredients together in a small bowl. Dip top of donuts into glaze. Top with sprinkles if desired
