Easy Peanut Butter Granola Bites

This past weekend I had the pleasure of attending a weight management conference held by the Weight Management Dietetic Practice Group in St. Louis, Missouri.  I attended the conference with about 200 other registered dietitians and weight management professionals.  The conference allowed me to network and collaborate with some of the top weight management professionals nationwide.

In a future post I will share some of the new products I learned about.  I am very excited about some of the new products I was able to try!

Today’s recipe features a super easy recipe to make peanut butter granola bites!  In fact this is our first granola bar type recipe, but certainly not the last.  You only need a few ingredients to have this complete recipe.  All you need is peanut butter, honey, and chia seeds.  This is a no bake recipe – simply mix the ingredients and refrigerate!

Easy Peanut Butter Granola Bites

Ingredients (12 bite)
  • 1/3 cup natural creamy peanut butter
  • 1 cup instant oats
  • 1/3 cup honey
  • 1 tablespoon chia seeds
Instructions
1. Mix all ingredients well; refrigerate about 30 minutes
2. Form about 1 tablespoon of mixture into small balls (should make about 12 balls)
*Balls are typically better stored refrigerated
