Pumpkin Waffled French Toast

This fall inspired fluffy French toast is loaded with pumpkin spice flavors and uniquely cooked in a waffle iron.

Hi Friends!
I’m back!  Sorry, I have been MIA over the past month.  Life has been busy, to say the least, and unfortunately, blogging got put on the back burner.  Some of the craziness was due to multiple back to back travels.  Some for pleasure and other were work oriented.  Over the next few weeks, I plan to share more about the worked geared travels.  I had the opportunity to travel to several amazing places throughout the east coast ranging from the mountains of Vermont to the beaches of Florida.   During the travels, I was able to connect with many like-minded health bloggers!
Today I am excited to share this recipe for Pumpkin Waffled French Toast!  I wanted to sneak in a pumpkin recipe before pumpkin season ends. Hopefully, you are not totally over pumpkin yet.  Perhaps it’s not hard to do given all the prepared pumpkin foods available at the grocery store these days!
Have you ever thought about cooking your french toast in the waffle iron instead of in a skillet over the stove?  Well if not today’s recipe will hopefully inspire you to give this method a try.  If you have checked out any of the other recipes on the blog you know I am all about simple easy recipes – well this french toast recipe certainly meets theses standards.  To create this effortless recipe you mix a few ingredients together, soak bread slices into the mixture, and then put the soaked bread into the preheated waffle iron for a few minutes. Viola!
As you can see I kept things easy with the topping and stuck to good ole maple syrup.  However you could certainly be a bit more creative and top the waffles with some yogurt and pumpkin spice, caramel, and nuts, or a vanilla glaze with chocolate chips.  Perhaps the yogurt and spice would be the healthier of options.
Wondering what type of bread I used for the recipe? For ample fiber and lesser carbohydrate content I decided to go with a sprouted grain bread, but whole grain or white bread would also work.  If using the sprouted grain bread as I did, you may consider soaking the bread in the egg and milk mixture for a bit longer than recipe directions instruct to ensure a chewy spongy consistency.

    I've been making French toast in a waffle iron for a while, but had never thought to whisk pumpkin into the batter. Genius! Can't wait to try this.
