According to Wikipedia Shepherd’s Pie (also known as cottage pie) is a meat pie with a crust made from potatoes. To many people Shepherd’s Pie is a considered a “comfort food”, meaning if offers a sense of wellbeing or nostalgic feeling. Most “comfort foods” are significantly higher in calories and fat. Typically Shepherd’s Pie is made with ground beef and may range in calories anywhere from 400 to 824 calories per serving. Most dietitians recommend approximately 800 calories after the consumption of two meals, not one meal!
Although I did not grow up eating Shepherd’s Pie (probably because I would refuse to eat foods that touched), my recent encounters with the dish always leave me wanting me. Of course I allow myself to have the traditional recipe for Shepherds Pie on occasion, however I wanted to create a recipe I could enjoy a bit more frequently. I have done just that for you!
The traditional Shepherds Pie recipe contain several high calorie contributing ingredients – such as ground beef, cream, and butter. For a lower calorie recipe I substituted the ground beef with ground turkey and used my recipe for “Chicken Broth Mashed Potatoes” for the top crust. The mashed potato recipe uses chicken broth and a light buttery spread instead of high fat butter and cream. For added fiber and micronutrients I suggest to pack the dish with veggies. Let your family choose their favorite vegetables to add.
