I hope you had a fantastic Thanksgiving holiday and got to spend some relaxing time with family and friends. A few days before I unplugged from social media for the holiday this recipe for the Best Tortilla Crust Pizza was created. I had no idea this quick and easy recipe would turn out so delicious. This recipe is seriously one of the most delicious homemade pizzas I have ever made (and if you follow along on the blog you know I have made several pizza recipes). The hubs actually thought he was eating a thin crust pizza I pulled out of the freezer.
So what is the secret to successfully creating the Best Tortilla Crust Pizza ever?! A typical tortilla crust would be too thin and flimsy for a pizza. The secret is to actually layer two tortillas together with a very thin layer of mozzarella cheese in between. The layers create a flaky thin-crust pizza. The key is to not overdo the cheese portion in between the tortillas or add too much pizza sauce or cheese on top. The result will be a soggy pizza that lacks crunch. Also, make sure you bake the pizza until the tortilla is well browned to ensure a crunchy crust.
Let’s talk tortillas now! My current tortilla addiction is actually purchasing uncooked tortillas that are in a flattened dough form and quickly cook them myself. Each tortilla takes about 60 seconds to prepare (possibly a little longer if you want a more crunchy tortilla). I have created so many different recipes with these tortillas. If these tortillas are not available in your local grocer the already cooked packaged tortillas will also work for this recipe.

Best Tortilla Crust Pizza
Ingredients
- 2 medium flour tortillas
- 2 tbsp mozzarella cheese shredded
- 3 tbsp pizza sauce
- 1/3-1/2 cup mozzarella cheese shredded
- sprinkle basil (dried or fresh)
- Optional: other desired toppings
Instructions

Pre-heat oven to 425 degrees Fahrenheit

Place one tortilla flat on a pizza sheet or baking sheet that has been sprayed with non-stick cooking spray

Sprinkle 2 tbsp of mozzarella cheese on tortilla evenly. Top with second tortilla. Spread sauce on pizza and top with remaining cheese. Top with any desired toppings Place in oven and bake at 425 degrees Fahrenheit for about 5-7 minutes or until edges are slightly browned.

Remove from oven and let cool for at least 5 minutes before enjoying
