I am back with another waffle recipe! If you have been following any of my Instagram lately stories you may have seen lots of my waffle creations. I got a Breville waffle maker for Mother’s Day this year, and I am obsessed! It seriously makes the best waffles ever – better than a lot of waffles I have eaten at some of the finest brunch places. The waffles come out super crunchy on the outside and soft and chewy on the instead.
Today’s recipe for Gluten Free Carrot Banana Waffles was an inspiration from one of my most popular recipes on the blog, Spinach Banana Waffles. I made the recipe a few years ago in efforts to add more veggies to my picky toddler’s diet. He loves the recipe so much I decided it was time to experiment another vegetable in the recipe. According to my toddler shredded carrots just happen to work perfectly in the recipe!
The waffle recipe contains no added sugars and is made with four simple ingredients – including bananas, carrots, oatmeal, and eggs. The bananas and carrots add a naturally sweet flavor. The oatmeal adds whole grains to the recipe, which can help aid with fullness. You will need to use a blender or food processor to ensure all of the ingredients are blended to a smooth consistency, similar to a traditional waffle batter.
You can choose to eat the waffles with your favorite waffles or carrot cake topping. Consider topping with syrup, Greek yogurt, raisin, or granola (or a combination of those choices). One of my friends who tried the waffles said she would eat them like a carrot cake muffin – toast them and spread a bit of butter on top. If you want to keep it simple, you can just enjoy the waffles plain! On most occasions, my little one enjoys the plain version.

GF Carrot Cake Banana Waffles
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients (3-4 waffles)
- 2 eggs
- 3/4 cup shredded carrot, raw
- 1 medium banana
- 1/2 cup oats
- Dash of vanilla and cinnamon
- Optional: raisin, granola or yogurt for topping
Instructions
1. Pre-heat waffle iron
2. In a blender, blend all ingredients until well combined (typically takes 1-2 minutes)
3. Depending on the type of waffle iron you have, fill each section with 1/2 cup of the batter
4. Close iron and cook until waffle slightly browned and cooked through (typically about 5 minutes)
5. Optional: Top with Greek yogurt, syrup, or fruit
