Serve a healthier appetizer this holiday season with a festive Christmas Ornament Vegetable Tray!
Well, it looks like I am at it again – creating festive holiday themed vegetable trays! I had the pleasure of spending several hours in my kitchen this past weekend creating and cooking several dishes for an upcoming project on Wednesday. Stay tuned for the details! I plan on sharing more of yesterday’s recipe creations later on in the week.
Spending unrestricted time in the kitchen is not something that happens often in this working mom’s life. But when I do get the opportunity, I try to use the time to let out my creative side and clear my mind of the outside world. It’s like my meditation spot!
This Christmas Ornament Vegetable Tray happened to be one of the things I created during my time in the kitchen. It will be paired with a Christmas tree vegetable platter made from broccoli and cherry tomatoes like this one. While the broccoli tray was not an original creation, I am excited about the originality of the vegetable ornament tray.
Not pictured with this vegetable tray is the hummus dip I plan to pair with it. At my son’s first birthday party at the last minute, we decided to serve some sliced cucumber and hummus. More of the cucumbers were eaten than the cupcakes! We were glad that we decided to offer our guest this additional option. I have full confidence this more creative vegetable tray will be eaten up quickly.
Let’s talk about all the health benefits of cucumbers! Cucumbers consist of 96 percent water, which means ample hydration. Inadequate hydration can lead to many health consequences such as lethargy and headaches. Cucumbers are packed with vitamin C, which helps with immune function and serves as an antioxidant. Lastly, the content of vitamin K in cucumbers is relatively high. Vitamin K is helpful with blood clotting and to maintain optimal bone health. So many reasons to eat cucumbers!

Christmas Ornament Vegetable Platter

Prep Time: 20 minutes
Ingredients
- 1 – red pepper, cut into thin slices
- 1 – yellow pepper, cut into thin slices
- handful of cherry tomatoes, sliced in half
- 2-3 cucumbers, cut into thin slices
Instructions
1. Place vegetables in form of ornament as pictured above
2. Serve with dip of choice
