Happy Friday!!
Since the arrival of Max I have not been able to spend any time creating recipes for upcoming blog posts. I miss this creative time I used to have (of course the adorable baby is a better trade), so it felt good to get back into the kitchen yesterday and let my mind go.
Today’s recipe does not involve any cooking or baking, but I still was able to come up with a treat the whole family will enjoy. The creation is a Rice Cake topped with peanut butter and candy to resemble a Christmas tree ornament. The peanut butter not only creates a layer for the candy to adhere to the rice cake, but also adds protein to the snack. I choose chocolate coated chocolate candies and red licorice to create the ornament design, however you could choose any of you favorite candy pieces.
Allowing the kiddos to design their own Rice Cake Ornament is fun activity for an Advent event or to do on a rainy day during the holiday season. I am pretty certain even the adults will enjoy eating this lower calorie snack treat. Who can resist the combination of chocolate and peanut butter?!
On another note I participated in television segment last week for a local show, Atlanta Plugged In, discussing some holiday pantry staples. The segment is scheduled to air this upcoming Monday, however I was already able to view the segment. Overall I was pleased with the outcome of the filming, except for the angle of some of the camera shots. Unfortunately my hair was down and blocked half of my face – lesson learned! Stay tuned for a post next week about my preparation and to find out what the pantry staples you should stock up on this holiday season!
