Today’s recipe is one that I have been brainstorming about since last fall season! I finally got the chance to work on the creation a few days ago. The recipe only involves a few ingredients and is extremely simple to make. Greek yogurt and TruWhip (a more natural version of Cool Whip) were used to create the cream filling. Chocolate graham crackers were crushed to serve as a divider between each creamy layer. The graham crackers could be substituted with crushed Oreo sandwich cookies or even granola.
The end result is a delicious light and creamy treat with a hint of pumpkin and chocolate flavoring! Perfect to serve up at this year’s halloween party or to spoil the kiddos for an afternoon treat. Each parfait will only cost you 180 calories, but provides 9 g of protein! It is hard to find that many grams of protein in most sweet treats.
If you are looking for an even lower calorie treat skip the graham crackers all together. You can save approximately 70 calories per parfait by doing this – now we are talking about a 100 calories treat! It gets better!
In case you missed it, on Monday I blogged about the fantastic showers thrown for Lil’ Man. We are 3.5 weeks from due date and counting! What will life be like after Lil’ Man arrives? Hectic from what I hear. But guess we will wait and see. Until then I will keep on blogging!

- 4 sheets of chocolate graham crackers, crushed (could also use oreo cookies)
Pumpkin Layer
- 1 cup TruWhip (or Cool Whip Light)
- 1 cup 0% fat vanilla Greek yogurt
- 1/2 cup pure pumpkin
- 1/4 – 1/2 teaspoon cinnamon
- 1/4 teaspoon pumpkin pie spice
Yogurt Layer
- 1 cup TruWhip (or Cool Whip Light)
- 1 cup 0% fat vanilla Greek yogurt
Optional:
- Chocolate sprinkles
