The first Friday of June has come to be celebrated as National Donut Day. This past Friday we celebrated this day. You might have noticed a multitude of postings and pictures on social media of donuts on Friday. I know I did and it left me drooling!
After seeing all of the postings and pictures on Friday, I was inspired to work on a new healthier baked donut recipe. Yes I contemplated just going to the donut store instead, but Saturday morning I fought the temptation and worked on a healthier recipe. As a child I always use to love maple glazed donuts from a local donut chain in Oklahoma called Daylight Donuts, so I decided to use that as the flavoring for my new recipe.
In efforts to make a “healthier” breakfast or snack item I baked the donuts instead of frying them (a majority of donut shops fry their donuts) and included some whole grains and lower fat baking methods. For the flour in the recipe, I included both white enriched flour and whole grain flour (my favorite is King Arthur 100% Whole Grain Flour) in a 50:50 ratio. As I do in all of my baked recipes I substituted a portion (half) of the fat (butter) with unsweetened applesauce. If you want the donuts to maintain their freshness longer (more than 24 hours) I would suggest skipping the the applesauce and doubling up on the butter.
The outcome of these Baked Whole Grain Maple Glazed Donut was a delicious moist donut with a sweet maple glaze on top. The actual donuts themselves are not overly sweet, but the sweeter glaze provides the perfect sweetness in each bite.

- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/3 cup granulated sugar (or light brown sugar)
- 1/4 cup low fat milk milk
- 1/4 cup Greek yogurt
- 1 large egg
- 1Tablespoon unsalted butter, melted
- 1 Tablespoon unsweetened applesauce (or another tablespoon butter)
- 1 and 1/2 teaspoons vanilla extract
- 1 tablespoon butter (I used Smart Balance)
- 1/2 cup + 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla
- 1-2 teaspoons maple syrup
- optional: 0.5 – 1 tablespoon water
