My current fro-yo obsession is the Cookies and Cream flavor at Pinkberry. Without doubt I could eat this sweet treat every single day if my wallet allowed. Unlike many of the flavors at Pinkberry, this flavor lacks the sour flavor and provides and sweet creamy treat. Of note a small will set you back approximately 200 calories (of course this is without toppings).
Recently to prepare for a work event I made homemade ice cream using a traditional ice cream maker. During this process I realized how easy it is to make homemade ice cream. This experience led to the desire to recreate my favorite Pinkberry fro-yo. Fortunately with a combination of healthy ingredients I was able to recreate a delicious copycat recipe of the loved fro-yo.
Although my fro-yo creation might not have the same presentation Pinkberry the outcome is a creamy sweet treat with a cookies and cream flavor. The great news about my recreation is that one serving (1/2 cup) can be enjoyed for only 115 calories and provides 4 grams of protein!!

- 1 ½ cup low fat vanilla Greek yogurt
- 1 ½ cup 2% milk
- 2 cups lowfat buttermilk
- ¾ cup sugar
- 1 teaspoon pure vanilla extract
- 12 Oreo cookies, crushed

Mmmmmmm! With this summer heat, I've been experimenting with lots of healthy popsicles, sorbets, frozen yogurts … you get the idea! This looks delicious and so much healthier! Who needs the Pinkberry presentation, anyway!?!? Seems to me all you need is a spoon!
