What is not to love about creamy cookie dough flavored oats?!
Overnight oats made with chia seeds have become quite popular over the past year. All you need is a few simple ingredients and time (overnight) to produce a delicious and healthy breakfast. A main ingredient, oatmeal, is typically prepared through a heating process. This particular recipe changes things up and actually uses a cooling process to prepare the oatmeal.
A variety of overnight oats recipes have been surfacing on blogs and online, however I wanted to bring a new spin to the idea. Most recipes include chia seeds, which most people are not familiar with consuming. The goal of this creation was to combine a traditional flavoring (cookie dough) with a less familiar food, Chia seeds. The result was refreshing creamy cookie dough flavored oat yogurt topped with your favorite cookie add-ins.
Although chia seeds have been in existence for centuries (dating back to the Aztecs), it was not until recently they become more popular as part of meals. You might remember Chia pets right? Same seeds! Chia seeds are a nutritious whole grain absorbed by the body as a seed. They are loaded with fiber, protein, omega-3 fatty acids, and many vitamins. Most often they are served similar to grains – in yogurt, cereals, veggies, or baked goods. Sounds like an excellent way to spice up your next casserole!
