I love desserts! There I said it. I love sweets. Now that we have that out there, I am always looking for healthier recipes to make a sweet treat. As a nutritionist, I strongly believe you shouldn’t restrict any food group, but some food groups should be eaten less than others. Sweets are one of the food groups most nutrition experts suggest to eat conservatively.
I created an easy sweet treat that the whole family can enjoy both preparing and eating. Meet my strawberry shortcake made via a coffee mug. The best part of this recipe is that it can be made one serving at a time in only a few minutes. OH WAIT.. the better news is that one serving of the strawberry shortcake is less than 150 calories!!

Coffee Mug Angel Food Strawberry Shortcake
Ingredients
- 3 tbsp cake mixture see below for instructions on cake mixture
- 2 tbsp water
- 2 tbsp cool whip
- 2-3 medium strawberries sliced
- Coffee mug
- non-stick cooking spray
Cake mixture - combine 1 box of white cake mix + 1 box angel food cake mix
Instructions

Lightly spray a microwave safe coffee mug with non-stick cooking spray

Combine the cake mixture and water in the mug

Microwave the mixture for 1 minute

Gently remove the cooked cake from the coffee mug. Let cool for 1-2 minutes.

Gently slice the cake in half horizontally.

Place the bottom layer on a plate. Next spoon 1 1/2 tablespoons of cool whip. Layer the desired amount of strawberries on top of the slice of cake

Place top layer of cake on the cool whip.

Spoon remaining cool whip on the top. Add remaining strawberries on cool whip or next to cake.
